Ingredients
  

Cauliflower
  • 1 head cauliflower cut into bite-size florets
Batter
  • 3/4 cup all purpose flour
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 3/4 cup buttermilk
Buffalo Toss
  • 2 Tbsp butter melted
  • 3/4 cup buffalo sauce (example: Primal Kitchen No Dairy Buffalo Sauce)
  • avocado oil spray (optional, for crisping and/or finishing)

Method
 

Oven Method
  1. Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, paprika, onion powder, garlic powder, and salt.
  3. Add the buttermilk and stir until a thick batter forms.
  4. Add cauliflower florets and toss until evenly coated.
  5. Arrange florets in a single layer on the baking sheets, leaving space between pieces.
  6. Bake 20 minutes, flip, then bake 15-20 minutes more until crisp and golden.
  7. While baking, whisk together buffalo sauce + melted butter. (Optional: add a quick spritz of avocado oil to the bowl for extra cling/crisp.)
  8. Transfer hot cauliflower to a bowl and toss with buffalo sauce until well coated.
  9. Serve immediately.
Air Fryer Option
  1. Preheat air fryer to 375°F.
  2. Working in batches, arrange battered florets in a single layer.
  3. Air fry 12-15 minutes, shaking/flipping halfway, until crisp.
  4. Toss with buffalo sauce mixture and serve.
